What is complexity in wine?  What takes a grape from workhorse to showhorse?

To find out, we brought in the experts to the studio space at Wild by Tart. 

Paula Fandiño

Self-confessed Albariño geek from Galicia’s Mar de Frades whose mission is to bring depth and complexity to her region’s flagship grape.  From concrete fermentation, to ageing on the lees, to the ganimede method (email us if you want an explanation!) - everything is about taking Albariño to the next level.

Peter Wallbridge

Enotria&Coe’s in-house ‘man of wine’, who selected wines from his portfolio (from Torrontès to Cinsault via Airèn) that also bring complexity to places it’s least expected.

Qian Janice Wang

Assistant Professor of Food Science at Aarhus University with, to quote one of our guests, a brain the size of a planet!  Neuroscientist Janice presented the findings of several academic papers attempting to define complexity in wine. 

After all that hard work, it was time for a well-earned lunch from the Wild by Tart team.
