Premium Pinot Grigio With Cavit Character

Did you know that the average working hours per hectare in mountainous Trentino are 450-500 per year?  Everything has to be carried out manually, meaning this figure is up to 6 or 7 times higher than in the flatter parts of Italy.

And did you also know that in one of quality conscious Cavit’s designated Bottega Vinai vineyards, annual working hours can be double that, and as high as 800-1,000 hours per hectare in the most extreme and labour intensive vineyards?

This is because the Trentino based co-operative takes a craftsman’s approach to its winemaking:  it is a big company, but it is comprised of many small wineries enabling it to combine the advantages of a largescale operation with the values and traditions typical of small-scale family producers.

Cavit has access to 5,500ha of vines throughout the region via its ten member wineries and 4,500 member growers.  Just 3.3%, or 180h, of the total Cavit vineyards have been selected and set aside for making the Bottega Vinai wines.  Once picked, the grapes from the different growers are vinified separately in small batches and the winemaking team, headed up by Anselmo Martini, will then select the best wines in any given vintage to blend together.  Recent years have seen a change in the winemaking style, with the team increasingly selecting the most characterful wines with good varietal expression, and employing minimal use of barrique or cask ageing so as not to mask the natural fruit character.

According to Anselmo, 2016 was a particularly interesting vintage for Pinot Grigio Trentino DOC as the climate was good, with no temperature peaks, and rainfall in September was low, giving fruit with a good degree of ripeness.

The grapes for Cavit’s Bottega Vinai Pinot Grigio 2016 came from two very different geographical areas:  Roverè della Luna in Northern Trentino, where the climate is Alpine-continental, the production of Pinot Grigio goes back over one hundred years, and the vines are between 30-60 years old.  And the Valle dei Laghi, with its sub-Mediterranean mild winters and hot summers.  There is a significant temperature variation between day and night thanks to the ‘Ora del Garda’ breeze from Lake Garda, which helps to retain freshness and acidity in the fruit.   

The 100% Pinot Grigio grapes were picked by hand and gently whole-bunch crushed to avoid colour extraction.  Vinification took place off the skins, and fermentation was then in stainless steel at 18°C. 

The Cavit Bottega Vinai Pinot Grigio 2016 won both a Gold Medal and Food Matching Trophy at the Imbibe 2017 Sommelier Wine Awards.  The judging panel found floral notes on the nose, and ripe apple fruit on the palate with good weight, texture and freshness.  Great with scallops, shellfish and seafood risotto.  The 2015 vintage of the same wine was also an Imbibe Sommelier Wine Awards Gold Medal winner in 2016.

Cavit was formed in 1950 to train Trentino’s winegrowers and create a winemaking culture throughout the region.
